  1. 1 cup 62g / 2 1/5oz All-purpose flour - sifted

  2. 1 teaspoon 5ml Baking powder

  3. 1 teaspoon 5ml Salt

  4. 1/8 teaspoon 0.6ml Pepper

  5. 1/4 teaspoon 1 1/3ml Paprika

  6. 1 cup 237ml Sausage - cooked and crumbled

  7. 1 cup 62g / 2 1/5oz Fresh corn off the cob

  8. 2 Egg yolks - beaten

  9. 2 tablespoons 30ml Milk

  10. 2 Egg whites - beaten stiff Oil - for frying

  1. Recipe Instructions Sift flour, baking powder, and spices together in a mixing bowl. Add sausage, corn, egg yolks, and milk; mix until blended. Fold in stiffly beaten egg whites. Drop by heaping teaspoonfuls into oil heated to 360 - 365F. Cook 3 to 5 minutes, turning to brown on all sides. Drain on paper towels. Makes about 24 fritters
