  1. 1 tablespoon oil

  2. 1 onion, finely chopped

  3. 2 rashers rindless bacon, finely chopped

  4. 1 cup cooked short grain rice

  5. cup (135g) pitted prunes, chopped

  6. cup (40g) pine nuts, toasted

  7. 1 tablespoon thyme leaves

  8. 1 egg, lightly beaten

  9. Makes 2 1/2 cups

  1. Heat oil in a frying pan on high. Cook onion, stirring for 3 minutes, until soft. Add bacon and cook for another 3 minutes, until bacon is browned.

  2. Combine rice, prunes, pine nuts, thyme and egg in a bowl. Use to stuff crop (breast) of turkey .

  3. Tip 1: You will need approximately 1/3 cup uncooked rice to yield 1 cup of cooked.
