  1. 1/2c Chopped onions

  2. 2 tb Minced garlic

  3. 1 tb Minced ginger root

  4. 1/3c Dry sherry

  5. 1 tb Olive oil

  6. 2 c Vegetable broth

  7. 4 c Peeled, seeded, cubed

  8. - butternut squash

  9. 1 tb Lemon juice

  10. 1/2ts Coriander

  11. 1/2ts Nutmeg

  12. 1/2ts Cumin

  13. 1/2ts Cinnamon

  14. 1 tb Lemon rind

  1. + In a large pot, saute onions, garlic & ginger in oil & sherry for 10 minutes.

  2. Stir frequently.

  3. If the vegetables stick, add a little stock.

  4. Add remaining stock & squash.

  5. Cover pot & bring to a boil.

  6. Lower heat & simmer for 25 minutes.

  7. Remove from heat & let cool 10 minutes.

  8. Puree in a blender, then stir in the remaining ingredients.

  9. Garnish with lemon rind.
