  1. 2 pounds chicken breasts, boned and skinned

  2. 1/2 pound seasoned bread crumbs

  3. 2 egg s

  4. 2 tablespoons water

  5. 1 cup corn oil

  6. 1 cup white wine

  7. 3 lemon s

  8. 1 can chicken broth, optional

  1. Clean chicken cutlets with cold water and pat dry. Cut into 2" nuggets. Beat egg and water, and dip chicken pieces first into egg and then into seasoned bread crumbs.

  2. Heat oil in frying pan and cook chicken cutlets on both sides until lightly browned and cooked throughout. Instead of frying, chicken may be placed in baking pan, coated with oil, and baked in a 350 degree oven for 20 minutes, turning once.

  3. Place cooked chicken pieces into a large bowl. Add wine, lemon juice, and chicken broth. Stir to coat and serve hot.

  4. Note: If oil becomes heavy with bread crumbs, strain oil and clean pan. Replace oil, add more if necessary, and continue frying.
