  1. 6 ounces hot smoked sausage -- sliced

  2. 2 cans del monte cajun style stewed tomatoes --

  3. 14 1/2oz 8 ounces medium shrimp -- shelled,deveined or 6 ounces ham -- diced

  4. 1 cup uncooked rice

  5. 1 large clov garlic -- minced

  6. 1 bay leaf

  7. 1 tablespoon chopped parsley

  1. Preparation : In a heavy 4 quart pot brown sausage (and ham if using) over low heat. Drain tomatoes reserving liquid. Add water to reserved liquid to measure 1 1/2 cups. Add to sausage with tomatoes, shrimp (if using) and remaining ingredients. Bring to a boil. Stir; reduce heat to low. Cover; simmer 30 to 35 minutes or until liquid is absorbed, stirring occasionally. Remove bay leaf. Makes 4 to 6 servings.
