  1. for Geneva Griddle Cakes Recipe

  2. 1 1/2 pints flour

  3. 4 Tbsp. sugar

  4. 1/2 tsp. salt

  5. 1 1/2 tsp. baking powder

  6. 2 Tbsp. butter

  7. 4 eggs

  8. 1/2 pint milk, approximately

  1. Cream together butter and sugar Add egg yolks one at a time.

  2. Sift flour, salt, and powder together; add to mixture.

  3. Whip milk and egg whites to dry froth; add to mixture into a smooth batter.

  4. Bake in small cakes; as soon as brown, turn and brown the other side.

  5. Have buttered baking-tin; fast as browned, lay them on it, and spread raspberry jam over them.

  6. Repeat this until you have used jam twice, then bake another batch to cover them.

  7. Sift sugar plentifully over cakes, place in a moderate oven to finish cooking and keep warm. .
