  1. 2 tablespoons 30ml Vegetable oil

  2. 2 tablespoons 30ml Onions - finely chopped (medium)

  3. 1 1/2 teaspoons 7 1/2ml Fresh ginger - peeled

  4. 1 1/2 teaspoons 7 1/2ml Garlic

  5. 1/2 teaspoon 2 1/2ml Turmeric

  6. 2 teaspoons 10ml Ground coriander

  7. 2 teaspoons 10ml Ground cumin

  8. Coarse salt

  9. 2 Whole tomatoes - chopped

  10. 1 teaspoon 5ml Chile powder - or more to taste

  11. 40 Okra - trimmed and cut into 1-inch pieces

  12. 1/2 Green bell pepper - chopped

  13. 1 teaspoon 5ml Garam masala

  1. Grind ginger and garlic into a paste using a small food processor.

  2. Heat oil in large skillet, over medium heat, add onions, and saute until translucent, about 5 minutes. Add ginger-garlic paste, turmeric, coriander, cumin, and salt; cook, stirring, 1 to 2 minutes.

  3. Add tomatoes, chile powder, okra, and green peppers. If mixture appears dry, add 1/4 cup water. Add garam masala, and cook, covered, 15 to 20 minutes.
