  1. 6 boneless, skinless chicken breasts

  2. 6 tablespoons Cajun seasoning

  3. 1 tablespoon olive oil

  4. 6 Kaiser rolls, toasted Creamy Cucumber Slaw:

  5. 2 cups shredded cabbage

  6. 1/4 cup sliced green onion

  7. 1/4 cup thinly sliced radishes

  8. 2 tablespoons minced fresh parsley

  9. 1 small peeled and seeded cucumber

  10. 1/2 cup sour cream

  11. 1 tablespoon fresh lemon juice

  12. 1 tablespoon sugar

  13. 1/2 teaspoon prepared mustard

  14. 1/4 teaspoon salt

  15. 1/2 teaspoon celery seed

  1. Prepare Chicken: Sprinkle chicken with Cajun seasoning, coating well. In large skillet, heat olive oil over medium. Add chicken and cook about 5 minutes or until lightly browned; turn and cook about 5 minutes more or until fork tender.

  2. Meanwhile, prepare Creamy Cucumber Slaw: In medium bowl, combine shredded cabbage, green onions, radishes and parsley. In blender, place cucumber, sour cream, lemon juice, sugar, mustard and salt. Blend until smooth and stir in celery seed.

  3. Combine cabbage mixture and cucumber mixture. Place 1 chicken breast half on each roll; top with creamy cucumber slaw.
