  1. 2 large idaho bakers - scrubbed

  2. 2 large slices sweet onion - vidalia about 1/4" thick

  3. 4 slices bacon - not thick

  4. 2 tablespoons butter

  5. 2 teaspoons seasoning salt - divided into 1/4 1 teaspoon pepper - divided into 1/4 2 large pieces of tin foil to cover potatoes

  1. Lightly spray the tinfoil where you you will place the potato with butter flavored cooking spray. Sprinkle the seasoning salt and pepper lighlty over this area. Split each potato in half. Lightly sprinkle the insides with seasoning salt and pepper. Place 1 slice of onion in potato. Top with 1 tablespoon butter. Place other half on onion slice. Using bacon wrap around potato forming a criss cross. Hold tightly and wrap tin foil around potato. Repeat with remaining potato and ingredients. Place in a preheated oven at 375 for approximately 1 hour, or until potatoes are soft and bacon is cooked. Yield: serves 2 Notes: This is my husband Darrell's recipe. He first made this recipe for my birthday dinner. Dinner was excellent and it was then I knew I had to marry him!
