  7. 10 1/2 oz Unsalted butter, melted

  8. 1 2/3 c Confectioners' sugar

  9. 2 lg Eggs

  10. 3 3/4 c Flour, sifted

  11. --LEMON CREAM--

  12. 3 Eggs

  13. 1 2/3 c Sugar

  14. 11 oz Unsalted butter, softened

  15. 3 Lemons, juiced and zests

  16. -grated

  17. --TOPPING--

  18. 35 Prunes, pitted and halved

  19. 3 oz Whole almonds, toasted

  20. 3 oz Hazelnuts, toasted

  21. 6 oz Walnut halves

  22. 6 oz Raisins, soaked in rum until

  23. -plump, and drained

  24. 70 1-inch pieces candied

  25. -orange peel

  26. The colors the fruits used in the cookies suggest those of the robes forn

  27. by the four ordres mendiants, monastic orders that originally lived on

  28. charity -- the Augustinians, Carmelites, Dominicans and Franciscans.

  29. Torte Pastry: In the bowl of an electric mixer fitted with a paddle, cream

  30. together butter and sugar until light. In a small bowl, whisk 1 egg. Pour

  31. 1/2 of the whisked egg into butter and sugar mixture, reserving the

  32. remaining half for another use. Add the remaining whole egg and blend

  33. mixture well. Remove paddle and replace with a dough hook. Add flour,

  34. mixing thoroughly. Form dough into a ball, wrap in waxed paper and refrigerate 2 hours.

  35. Roll dough out to a thickness of slightly more than 1/8 inch. Cut dough

  36. into 35 1 1/2-inch ovals with pointed ends and place on ungreased cookie

  37. 350F oven

  38. 15 to 20 minutes, or until cookies

  39. are a light caramel color. Lemon Cream: In a small saucepan over

  40. medium-high heat combine eggs, sugar, butter, lemon juice and lemon zest.

  41. Bring mixture to a goil, stirring continually with a wooden spoon. Boil

  42. gently for 30 seconds. Transfer mixture to a bowl, cover and chill

  43. thoroughly. Assemble: Spread each cookie with 1 heaping tablespoon of lemon

  44. 2 prun halves,

  45. 2 almonds,

  46. 2 hazelnuts,

  47. 2 walnut halves,

  48. 7 raisins and 2 pieces candied orange peel. Makes approximately
