  6. 1/4 cup Sake or dry sherry wine

  7. 1 tablespoon Soy sauce

  8. 1/2 teaspoon Toasted sesame oil

  9. 1 tablespoon Black bean sauce **

  10. 2 teaspoon Sugar

  11. 1 teaspoon Cornstarch

  12. 2 tablespoon Water -- optional

  13. 1 tablespoon Butter -- optional

  14. 1 tablespoon Flour

  15. Fresh ground white pepper 1/2 pound Perch filets

  16. ** Note: Black beans come whole or pureed and mixed with seasonings as a sauce.The sauce is what's called for.If only the beans are available,rinse in cold water and puree with a little chicken broth before using...

  18. 5 minutes.Add chicken broth,sake,soy sauce,sesame oil,black bean sauce and sugar.Cook at low boil
