  7. 2 pounds lean stewing beef -- cut in

  8. 1 1/2 chunks

  9. 2 onions -- sliced

  10. 2 cloves garlic -- chopped

  11. 2 tablespoons vegetable oil

  12. 1 eggplant, unpeeled -- cubed

  13. 1 cup beef broth

  14. 2 1/2 teaspoons cinnamon

  15. 1 teaspoon salt

  16. pepper

  17. 1 16 oz can garbanzo beans -- drained

  18. 1 16 oz can tomato wedges -- drained

  19. 1 tablespoon Kitchen Bouquet

  20. fluffy rice

  21. minced parsley

  22. In large skillet, brown beef, onions and garlic in oil; drain. Place in Crock-

  23. Pot.

  24. 2 cups boiling, salted water for 2 minutes; drain. Add to beef mixture; stir well. Combine beef broth with cinnamon, salt and pepper and 10 to 12 hours.

  25. One hour before serving, stir in garbanzos, tomato wedges and Kitchen Bouquet.
