  1. Filling:

  2. 453 g dried pitted dates

  3. 2/3 cup water

  4. 1 tsp. vanilla extract

  5. Crust:

  6. 1 1/2 cups old fashioned oats

  7. 1 1/2 cups all purpose flour

  8. 1 cup brown sugar

  9. 1/2 tsp. baking soda

  10. 1 cup cold butter, diced

  1. For filling:

  2. Combine dates, 1 cup brown sugar, water and vanilla in a saucepan and bring to a simmer, stirring. Simmer 1 minute. Puree in a food processor and cool.

  3. For crust:

  4. Preheat oven to 350 degrees. Butter a 9x13 baking pan. Stir together oats, flour, sugar and soda. Cut in butter and rub with your fingers until coarse crumb consistency. Press 1/2 of mixture into bottom of prepared pan. Spread filling over. Sprinkle remaining crumb mixture over top. Bake until golden brown, about 35 minutes. Cool in pan. Cut into squares to serve.
