  1. 4 Fried fish fillets,

  2. Fresh coriander sprigs for 1/4lb Ground pork

  3. 2 ts Minced fresh ginger

  4. 2 ts Minced garlic

  5. 2 ts Vegetable oil

  6. 1 ts Freshly ground white pepper

  7. 1/2c Water

  8. 2 ts Sugar

  9. 2 tb Fish sauce (nuoc mam)

  10. strips

  11. 5 Oriental mushrooms, julienne

  12. garnish

  1. + 1> Soak the mushrooms in warm water for about 30 minutes, until they are soft.

  2. Discard the stems and cut them into julienne strips.

  3. Mix the mushrooms with the fish sauce, sugar, water and pepper.

  4. Heat the oil in a medium skillet and add the garlic and ginger.

  5. Cook, stirring until lightly browned.

  6. Add the pork and cook, mashing and turning, until no pink remains.

  7. Add the mushroom mixture and heat through.

  8. Pour sauce over the fried fish and garnish with coriander sprigs.
