  1. 1 kg (2 lb) ripe bananas

  2. 75ml (3 fl oz) fresh lemon juice

  3. 2 tablespoons dark brown soft sugar

  4. 1/4 teaspoon ground nutmeg

  1. Combine all ingredients in a blender and purée until smooth. Heat to a boil in a saucepan and simmer slowly, till mixture is thickened. Serve warm over pancakes, or cool and serve as a jam.
