  1. SPICY CHERRY GLAZED CHICKEN

  2. 1 Tbsp. vegetable oil or olive oil

  3. 6 skinless chicken thighs (I would use breasts)

  4. 3/4 cup frozen apple cherry juice concentrate

  5. 1/4 cup honey

  6. 1 tsp salt

  7. 1/2 tsp ground cinnamon

  8. 1/2 tsp crushed red pepper flakes

  9. 1/4 tsp ground all spice

  10. 1/2 cup dried cherries

  11. 1/2 cup water

  12. 2 tsp cornstarch

  13. Place oil in bottom of 13x9" baking pan; spread to coat bottom.

  14. Arrange chicken in pan; set aside. In small saucepan, combine apple

  15. cherry juice concentrate, honey, salt, cinnamon, red pepper and all spice; mix well. Bring just to a boil over medium-high heat.

  16. Remove 1/2 cup sauce from pan; set aside. Pour remaining sauce

  17. 350 for 40 to 50 minutes,

  18. or until chicken is cooked through, turning once. Remove chicken

  19. to serving dish; keep warm. Pour pan drippings into reserved sauce;

  20. stir in dried cherries, water and cornstarch. Bring to a boil over

  21. 1 to 2 minutes, or until sauce is thickened,

  22. stirring frequently. To serve, pour sauce evenly over chicken.

  23. Makes 6 servings.
