  1. 1 1/2 cups flour

  2. 1 teaspoon baking soda

  3. 1 teaspoon cinnamon (or more)

  4. 1/4 teaspoon salt

  5. 2 eggs

  6. 3/4 cup dark brown sugar , firmly packed

  7. 1/4 cup vegetable oil

  8. 1/4 cup sour cream

  9. 1 teaspoon vanilla

  10. 3/4 cup apple , unpeeled and diced

  11. 3/4 cup cranberries

  12. 1/2 cup walnuts , chopped

  1. Mix flour, baking soda, cinnamon and salt in a large bowl.

  2. In a separate bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth.

  3. Stir in apple, cranberries and walnuts.

  4. Fold into dry ingredients.

  5. Bake at 350°F, for 20 to 25 minutes.
