  1. 3/4 pound Monterey Jack or mild Cheddar cheese, cubed

  2. 1 cup salsa, homemade or bought

  1. In a 1-quart microwave-safe bowl, mix the cheese cubes and salsa. Cover and cook on medium for five minutes or until the cheese has melted. Halfway through the cooking time, stir the mixture. Serve in the bowl with a basket of tortilla chips or sliced raw vegetables for dipping, such as red and green peppers or broccoli spears. Makes 2 cups.
