  3. 1/2 cup shredded cheddar cheese

  4. 1 avocado , diced

  5. 1 mangoes or 2 tomatoes , diced

  6. 1/2 cup sliced black olives , drained

  7. 1/2 lb cooked chicken or 1/2 lb lean ground beef , seasoned with

  8. salt , and chili powder

  9. 1 tablespoon lime juice (about 1/4 lime)

  10. 1/2 cup vinaigrette dressing

  11. 1 cup broken tortilla chips or 1 cup corn kernel

  12. light sour cream

  13. mild salsa

  1. In a large bowl, mix together lettuce, beans, cheese, avocado, mango, olives, and chicken. Sprinkle with lime juice and dressing and toss thoroughly.

  2. Top salad with broken chips and, if desired, dollops of sour cream and salsa.
