  1. 1 Bunch curly endive

  2. 1 c Olive oil

  3. 2 Egg yolks, well beaten

  4. 2 ts Prepared dijon mustard

  5. Mustard dressing

  6. 3 Stalks celery, sliced

  7. 3 Papayas

  8. 1 Bunch dandelion greens,

  9. Drained 1 Bunch watercress, washed and Washed and drained

  10. 1/3 c Lemon juice

  1. Spin or towel-dry greens and tear into bite-sized pieces.

  2. Reserve 1/3 greens; arrange remainder on 6 chilled salad plates.

  3. Slice papayas in half.

  4. Remove seeds and peels.

  5. Place 1 half on each salad plate.

  6. Arrange reserved greens over papayas.

  7. Sprinkle celery over.

  8. Drizzle each serving with Mustard Dressing.

  9. MUSTARD DRESSING: Combine mustard and egg yolks in mixng bowl.

  10. Mix in olive oil and lemon juice, blending well.
