  1. 1 pint fresh raspberries (boy are they expensive this time of year!)

  2. 1 cup fresh squeezed orange juice

  3. 1 tablespoon olive oil

  4. 1 tablespoon flax seed oil (or use whatever oil you want. After making this, I think it might be fine w/o any oil at all)

  5. splash of white vinegar (I think I could have left this out - between the raspberries and the oj, it's tart enuf)

  6. Put all the above ingredients in a blender. When smooth, strain to remove the berry seeds. Made almost 2 cups, eeek! I have lots of leftover dressing now.

  7. Salad

  8. bunch of baby greens (mesclun)

  9. two small red onions

  10. walnuts

  11. dried cranberries

  12. oj

  13. Soak the cranberries in the oj and put in microwave for a minute. Strain. Mix the baby greens with the cranberries and walnuts (to your taste, I used a lot of both). Pour on dressing and toss well. Slice the red onions into very fine rings, and place on top for decoration. Drop a few more cranberries and walnuts on top to look pretty. Serve :-)
