  1. 6 large green bell peppers

  2. 1 lb cooked ground Italian sausage

  3. 1 cup chopped white onion

  4. 3 chopped anaheim chilies or 3 other hot peppers

  5. 3 chopped sweet banana peppers or 3 other sweet mild pepper

  6. 1 red bell pepper

  7. 1 cup dry bread, crumbs or 1 cup cracker crumb

  8. 1 cup shredded mexican cheese, blend

  9. 1 cup shredded mozzarella cheese

  10. 1 tablespoon chipotle chiles in adobo or 1 tablespoon other hot sauce

  11. 2 tablespoons taco seasoning

  12. 1 (15 ounce) can tomato sauce

  1. Heat oven to 350 degrees.

  2. Cut stem end off each pepper and remove all seeds and membranes. Wash inside and outside.

  3. Heat a saucepan of water and 1/2 teaspoon salt to boiling. Add peppers; cook 5 minutes and drain.

  4. Brown sausage and onion in a skillet. Transfer to mixing bowl.

  5. Mix remaining ingredients with sausage/onion mixture. Reserve some cheese to top peppers later.

  6. Stuff each pepper with the suffing mixture. Stand peppers upright in ungreased baking dish, 8 x 8 x 2 inches.

  7. Sprinkle with cheese.

  8. Bake 30 minutes.
