  1. 1/2 lb Red kidney beans

  2. 2 c White rice

  3. 1 c Coconut milk thick

  4. 1 Onion coarse chopped

  5. 1/2 Green Bell pepper seeded & diced

  6. 1/4"

  7. 1 Garlic clove minced Salt & pepper to taste

  8. 1/4 t Dried thyme

  1. Cover beans with water then soak overnight. Place beans in pot then add onions, bell pepper, garlic & enough water to cover barely. Bring to a boil. Cook until beans are tender & still whole. Add coconut milk & seasonings. Add rice to beans then cook over med-low heat until liquid is absorbed. Stir lightly with a fork then add some water if necessary & cook until rice is done.
