  7. 6 eggs

  8. 1/2 cup parmesan cheese -- grated

  9. FILLING

  10. 3 tomatoes -- peeled and seeded

  11. 1 green bell pepper -- diced

  12. 1 red bell pepper -- diced

  13. 1 to 2 onion -- diced

  14. 2 cloves garlic -- minced

  15. 1/2 cup green olives -- seeded and sliced

  16. 1/2 tablespoon oregano

  17. olive oil

  18. salt and pepper -- to taste

  19. 1. Cook onions in oil until soft.

  20. 2. Stir in garlic and bell peppers,cook 3 minutes.

  21. 3. Stir in diced tomatoes, olives and seasonings. Cook a few minutes to

  22. reduce liquid.

  23. 4.Whip eggs. Stir in cheese, salt and pepper.

  24. 5. Stir in filling into eggs.

  25. 6. Oil a baking dish or Pyrex.

  26. &. Pour eggs mixture into dish.

  27. 9. Bake in 350 oven for 20 to 25 minutes.

  28. 10.Serve sliced at room temperature.
