  1. 4 Bacon

  2. 1 Onion - sliced

  3. 1/4 lb 113g / 4oz Mushrooms - sliced

  4. 1 tablespoon 15ml Flour

  5. 1/2 teaspoon 2 1/2ml Dry mustard

  6. 1 teaspoon 5ml Salt

  7. 1/2 teaspoon 2 1/2ml Tabasco brand Pepper Sauce

  8. 3/4 cup 177ml Water

  9. 1/4 cup 59ml Red wine vinegar

  10. 8 cups 320g / 11oz Fresh spinach leaves

  1. Recipe Instructions Cook bacon in large skillet until lightly browned; remove and crumble. Pour off all but 1 tablespoon bacon fat. Add onion; cook until tender, about 5 minutes. Add mushrooms; cook 5 minutes. Blend in flour, dry mustard, salt and Tabasco sauce. Stir in water and vinegar. Cook, stirring constantly, until mixture thickens and comes to a boil. Add spinach; mix well. Transfer to serving bowl. Sprinkle with crumbled cooked bacon. This recipe yields 4 servings.
