  1. 1 tablespoon 15ml Olive oil

  2. 4 Boneless skinless fish fillets - - (abt 6 oz each such as snapper, grouper or sea bass)

  3. 1 cup 237ml Spicy green salsa

  4. 1 cup 146g / 5.1oz Shredded Monterey jack cheese - (4 oz)

  5. 1/2 cup 118ml Chili flavored Pumpkorn (or toasted pumpkin seeds)

  1. Heat oven to 400 degrees. Spread olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish.

  2. Bake fish 8 minutes. Spread cheese evenly over top. Bake 2 to 3 minutes more, until cheese is bubbly. Sprinkle with Pumpkorn before serving.
