  1. 2 medium baking potatoes

  2. 1 Tbsp. dry minced onion

  3. 4 Tbsp. margarine

  4. 1 Tbsp. oil

  1. Boil potatoes whole and unpeeled in covered pan with just enough water to cover about 25 minutes or until fork tender. Remove from water and chill until cool enough to handle. Peel off skins and crumble potato in bowl, add onion, salt and pepper to taste. Mix well.Melt margarine and oil in 9 inch skillet. Pack crumbled potato mixture into pan to cover bottom. Brown gently on medium low about 6 to 8 minutes or until crispy brown. Serves 2 or 1 can pig out.
