  1. 1 x Baked

  2. 9" Pie Shell

  3. 2 x Envelopes unflavored Gelatin

  4. 6 oz Can frzn Limeade concentrate

  5. 1/3c Sugar

  6. 1 t Grated Lime rind

  7. 1 c Diced Strawberries

  8. 1 c Whipping cream, whipped

  9. 1 ds Green food coloring

  1. + Bake pie shell.

  2. Soften gelatin in 1/2 cup cold water.

  3. Combine limeaid concentrate, sugar, and 3/4 cold water in small saucepan; cook over low heat, stirring constantly, until concentrates melts and sugar dissolves.

  4. Add gelatin; stir until dissolved.

  5. Chill until syrupy.

  6. Stir in lime rind and strawberries.

  7. Fold in whipped cream until blended; tint pale green with food coloring.

  8. Chill until mixture mounds when dropped from a spoon.

  9. place in pie shell; chill 2-3 hours until firm.

  10. Garnish with additional sliced strawberries.

  11. Yield about 6-8 servings.

  12. NOTE: I made this with a graham cracker crust, and it came out very tasty.

  13. However, it was a little on the sweet side.
