  1. 55g margarine

  2. 180ml vegetable oil

  3. 200g caster sugar

  4. 1 egg, beaten

  5. 1 teaspoon vanilla extract

  6. 250g pumpkin puree

  7. 375g plain flour

  8. 1 teaspoon baking powder

  9. 1 teaspoon bicarbonate of soda

  10. 1/2 teaspoon salt

  11. 1 teaspoon ground cinnamon

  12. 100g walnuts

  1. Preheat the oven to 350 F (175 degrees C).

  2. Cream together the margarine, vegetable oil and sugar.

  3. Beat together the egg, vanilla and pumpkin.

  4. Sift together the flour, baking powder, bicarb, salt and cinnamon; combine with pumpkin mixture and stir in walnuts.

  5. Drop onto ungreased baking trays and bake for 10 to 12 minutes. Be careful not to overbake.
