  2. 4 large potatoes -- scrubbed, peeled,

  4. 2 teaspoons milk

  5. 2 egg yolks

  6. 3/4 teaspoon salt

  7. 1/8 teaspoon white pepper --

  8. 1 pinch cardamom --

  9. mix together

  10. 1 egg -- well beaten

  11. 1/2 teaspoon water -- cold

  12. 1/8 teaspoon paprika

  1. Steam potatoes until tender, about 20 minutes. Test with a fork. Mash adding butter, milk, seasoning to taste, then egg yolks. Try not to allow potatoes to cool very much. Spoon into heaping, rounded individual patties onto a buttered cookie sheet, or use a pastry bag to make spiraling puffs. Brush with egg and water mixture.

  2. Brown until light golden under a broiler for about 5 minutes. Sprinkle with paprika and serve.
