  1. 3 lb.s potato es, peeled and thinly sliced

  2. 3 onion s, thinly sliced

  3. 2 lb.s tomato es, thinly sliced

  4. Salt and pepper to taste

  5. 1/2 c olive oil

  6. 1 c grated Parmesan cheese

  1. Preheat oven to 375°F.

  2. Layer half potatoes, half onions, and half tomatoes in a greased casserole dish. Drizzle with half the oil and sprinkle with half the cheese and salt and pepper.

  3. Repeat and bake at 375°F for 1½ hours.
