  1. 1 cup Velveeta cheese

  2. 1 stick unsalted butter, softened

  3. 2 tsp. fresh lemon juice

  4. 1 tbsp. chopped fresh parsley Salt and pepper to taste

  1. CHEESE FRIES: Melt the Velveeta in a microwave-safe dish, and pour over fries. Whipped, processed cheese or store-bought cheese and salsa mixtures can also be used.

  2. LEMON-PARSLEY BUTTER: In a food processor, combined the butter, lemon juice and parsley, and process until smooth and blended. Add salt and pepper to taste. Scrape into a bowl, cover and refrigerate until ready to serve.

  3. BELGIAN MUSTARD-MAYONNAISE: In Belgium and some parts of France, French fries are traditionally served with a mustard-flavored mayonnaise for dipping. It may sound odd to those of us accustomed to ketchup, but I recommend trying it. You'll be a convert. In a bowl, combine the mayonnaise, mustard and lemon juice. Season to taste with salt and pepper.
