  1. 5 1/2 cups 803g / 28oz Julienne-cut broccoli stalk - (2 x 1/4-inch)

  2. 2 1/2 cups 156g / 5 1/2oz Diced seeded tomato

  3. 2 tablespoons 30ml Lemon juice

  4. 2 teaspoons 10ml Olive oil

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/8 teaspoon 0.6ml Pepper

  7. 2 Garlic cloves - crushed

  8. 1/4 cup 36g / 1 1/3oz Grated fresh parmesan cheese

  1. Recipe Instructions Combine broccoli and tomato in a bowl; toss well, and set aside. Combine lemon juice and next 4 ingredients in a blender, and process until smooth. Pour over the broccoli mixture, and toss well. Cover and marinate in refrigerator for 1 hour. Sprinkle with cheese. Yield: 3 cups (serving size: 1/2 cup).
