  2. 1 medium Onion, diced

  3. 1 English cucumber, diced

  4. 3 cups Chicken broth

  5. 2 cups Plain yogurt Salt & pepper to taste cup Fresh mint, chopped

  1. Saut‚ onion until golden. Stir in cucumber and cook 2 minutes. Add chicken broth and cook covered for 15 minutes. Cool slightly and pur‚e in a blender. Chill. Stir in yogurt, mint, and salt & pepper.
