  2. 4 cups fresh or frozen, thawed corn kernels

  3. 1 cup grated Cheddar cheese

  4. 8 ounces cream cheese, softened

  5. 7 ounce can diced green chilies, drained

  6. 2 tsp. chili powder

  7. 2 tsp. ground cumin

  8. pinch crumbled dried thyme

  1. Preheat oven to 350 degrees. Butter a medium cast iron skillet. Combine corn kernels, Cheddar, cream cheese, green chilies, chili powder, cumin and thyme in a large bowl. Stir until well combined. Bake about 30 minutes until bubbly. Serve hot.
