  1. 1 black pepper to taste

  2. 3 lbs fresh green beans

  3. 3 med onions

  4. 3 lg green or red peppers

  5. 1 ea egg, hard boiled

  6. 1/4cup lemon juice

  7. 2 cloves garlic

  8. 1/4tsp dry mustard

  9. 1/4c olive oil

  1. + Directions : Put a large pot of water on to boil. In the meantime, wash the green beans, and when the water comes to a boil again, let cook for about 5 minutes - enough to soften but not to take away crunchiness. Drain the water and cool the beans. In a blender, add the egg, olive oil, lemon juice, garlic, and mustard. Blend well. In a salad bowl, place cooked green beans with onions and green pepper. Pour the dressing over it, and sprinkle with black pepper.
