  6. 3 pt Strawberries

  7. 6 T Sugar

  9. 2 c All-purpose bleached flour

  10. 1/2 ts Salt

  11. 1 T Baking powder

  12. 3 T Sugar

  13. 8 T Frozen, unsalted butter

  14. 1 Egg, beaten

  15. 1/2 c Half & half, plus

  16. 1 Tbs

  17. 1 Egg white, lightly beaten

  18. 2 T Sugar for sprinkling

  19. Berries:

  20. Crush one pint and quarter the other two pints. Mix crushed &

  21. quartered berries with sugar in medium bowl; set aside while

  22. preparing biscuits.

  23. Shortcakes:

  24. Adjust oven rack to lower middle position; heat oven to 425 degrees.

  25. Mix flour, salt, baking powder, and 3 tablespoons sugar in medium

  26. bowl. Using large holes of box grater, grate butter into dry

  27. ingredients (instead of cutting it in!!). Toss butter with flour to

  28. coat. Finish cutting in butter (much easier after being grated in).

  29. Most of the butter pieces should be the size of split peas.

  30. Mix beaten egg with half and half; pour into flour mixture. Toss with

  31. fork until large clumps form. Turn mixture onto floured work surface

  32. and lightly knead until it comes together.

  33. 9 by 6 inch rectangle,

  34. 3/4 inch thick. Flour

  35. inch biscuit cutter; cut 6 dough rounds. Place one inch apart on

  36. small baking sheet; brush dough tops with egg white and sprinkle with

  37. 2 hours

  38. 12 to 14 minutes. Place

  39. baking sheet on wire rack; cool cakes until warm, about 10 minutes.

  40. Split each cake crosswise; spoon a portion of berries and a dollop of

  41. whipped cream over each cake bottom. Cap with cake top and serve

  42. immediately.
