  1. Southwest marinade

  2. 1 1/2 c. light beer

  3. 2 T. mustard

  4. 5 T. red wine vinegar

  5. 5 T. dark brown sugar

  6. 1/2 tsp. garlic powder

  8. 2 chicken breasts, boneless and skinless

  9. 1 c. green bell pepper, sliced

  10. 1 c. onion, sliced in rounds, separated into rings

  11. 5 green onions, minced

  12. 1/2 c. cilantro, minced

  13. 1 basic pizza crust dough

  14. 12" circle. Combine all marinade ingredients in saucepan. Simmer

  15. 4 minutes, stirring occasionally. Remove from heat; cool. Cut chicken breasts into 1/2" strips. Marinate chicken in glass dish

  16. 45 minutes. Drain and reserve marinade. Grill chicken strips, peppers and onion rings. Vegetables will cook in about 4 minutes; turn once. Brush vegetables with reserved marinade as they grill. Chicken cooks in about 6 minutes, turning once or twice. Arrange on pizza crust, which may be placed on pizza screen, coated lightly with oil or cooking spray, or on a paddle sprinkled lightly with corn meal. Sprinkle pizza with green onions and cilantro.
