  1. 3 -4 cups mashed potatoes , warmed (leftovers work fine)

  2. 1 cup sour cream

  3. 1/3 cup cheddar cheese , shredded

  4. 2 garlic cloves , chopped

  5. salt and black pepper, to taste

  6. 16 -20 frozen potato wedges (or crinkle cut or curly fries)

  7. 4 slices bacon , cooked and crumbled

  8. 2 green onions , chopped

  9. 1/4 cup parmesan cheese , grated

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Spray a quiche dish with nonstick cooking spray.

  3. Mix mashed potatoes, sour cream, cheddar cheese, and garlic in a bowl.

  4. Season with salt and pepper; stir to blend.

  5. Spread mashed potato mixture evenly into the quiche dish.

  6. Arrange the frozen potato wedges (or crinkle cuts) in a spoke wheel fashion on top of the mashed potatoes. For curly fries, make a random pattern, breaking in half any large fries.

  7. Sprinkle with bacon bits, green onion and parmesan cheese.

  8. Bake for 25-30 minutes.

  9. Cut into wedges and serve.
