  1. Macaroni And Cheese

  2. 1 tablespoon vegetable oil

  3. 4 tablespoons minced onions

  4. 4 tablespoons sweet butter

  5. 4 tablespoons flour

  6. 10 ounces milk

  7. 3 ounces White wine

  8. 1/2 teaspoon Hungarian paprika

  9. 6 ounces sharp white cheddar

  10. 3 ounces fontina cheese

  11. Fresh ground nutmeg; to taste

  12. Salt and fresh ground white pepper to taste

  13. 3/4 pounds cooked macaroni

  14. In a saucepan over low heat, add oil then the onions sweat until

  15. translucent. (no color) Add the butter. When butter is melted, stir

  16. in the flour, stir until smooth. Meanwhile, in a separate bowl,

  17. heat the milk and wine until it boils. Remove from the heat, stir

  18. in the paprika, cheese, season to taste with nutmeg, white pepper,

  19. and salt. Mix in your cooked macaroni and serve immediately. Note:

  20. If you like to turn this dish into a casserole, preheat the oven

  21. to 350 degrees, place the macaroni and cheese into a casserole dish,

  22. sprinkle 3 tablespoons grated Parmesan cheese on top, then sprinkle

  23. 1 tablespoon dried bread crumbs on top of the cheese. Cook for approximately 4 minutes or until lightly brown.
