  1. 1 - 1-1/2 lb. acorn or butternut squash

  2. 1/4 tsp. salt

  3. 1/8 tsp. pepper

  4. 1 Tbs. butter - softened

  5. 1/4 tsp. olive oil

  6. 1 tsp. chopped parsley

  1. Preheat oven to 375 degrees. Cut squash in half lengthwise and remove seeds. Sprinkle cut edges with salt and pepper then rub with butter. Place halves cut side down on greased pan and brush with olive oil. Bake 45 minutes or until fork-tender. Serve cut side up and sprinkle with parsley. *
