  1. 4 skinless chicken thighs (you can use breast but I find it too dry)

  2. 4 unpeeled garlic cloves (more or less to taste)

  3. 1 onion - halved

  4. 1/2 lemon, halved again

  5. small handful fresh thyme (lemon thyme even better)

  6. 400g new potatoes, washed and left whole unless huge

  7. 150ml stock or white wine

  8. Next ingredients are optional and I tend to throw in anything I have:

  9. 6 carrots, halved, peeled if needed

  10. peppers, deseeded and quartered

  11. mushrooms, whole

  12. large florets of cauli is quite nice

  1. Preheat oven to 160/gas 3 Take a large roasting tin and put all ingredients in, season and pour over stock/wine.

  2. Get your hands in and mix everything together, spread it all out.

  3. Cover tightly with foil and put in oven for 2 hours.

  4. I just serve it as it is - it's quite a hearty meal for 2
