    1. for Pan-Seared Tuna with Tomatoes

    2. 1.6-1.8lb fresh tuna

    3. 1-2 big tomatoes

    4. 3-4 tablespoons olive oil

    5. 3-4 large garlic cloves

    6. 2-3 parsley stalks

    7. Several fresh basil leaves

    8. 2-3 dashes dried oregano

    9. Salt to taste

    10. 1/2 cup dry red wine

    1. for Pan-Seared Tuna with Tomatoes Heat the olive oil in a frying pan.

    2. Add minced garlic to the oil.

    3. Add one, or two, peeled and finely chopped big ripe tomato . Season to taste with salt.

    4. Put tuna pieces, rinsed and scaled beforehand, into the sauce.

    5. Sprinkle fish pieces with oregano, rubbing it between your fingers to release its wonderful aroma.

    6. Add chopped parsley and basil .

    7. Pour dry red wine over everything.

    8. Cover and cook over medium heat for 20 minutes or so.

    9. Uncover, increase the heat to high, and simmer for additional 2-3 minutes until all liquid from the sauce has evaporated.

    10. Serve hot.
