  1. 1 tbsp. olive oil

  2. 2 shallots, thinly sliced

  3. 1/2 cup apricot preserves

  4. 1 tbsp. fresh lemon juice

  5. 1/2 tsp. tabasco sauce

  6. 1/4 tsp. creole seasoning

  7. 2265 g prepared rotisserie chicken

  1. Preheat oven to 350 degrees. Heat oil in a medium saucepan. Add shallot and cook until tender, about 3 to 5 minutes. Stir in preserves, lemon juice, tabasco and creole seasoning. Reduce heat to low and simmer 5 minutes. Brush glaze over chicken and place on a rack in a foil lined roasting pan. Bake 15 minutes.
