  2. 1 pound dried lentils, picked over

  3. 4 large tomatoes, chopped

  4. 1 large onion, peeled and finely chopped

  5. 1/4 cup olive oil

  6. 2 cloves garlic, peeled and minced

  7. 1 tsp. paprika

  8. 1/2 tsp. white pepper

  9. 1 tsp. salt

  10. 4 cups water

  11. 1 cup chopped fresh parsley leaves

  12. 1 cup chopped fresh cilantro leaves

  1. Combine lentils, tomatoes, onion, oil, garlic, paprika, salt, pepper and water in a large saucepan. Heat to a boil, stirring frequently. Reduce heat and simmer about 45 minutes until lentils are tender, adding more water if necessary. Stir in parsley and cilantro and simmer 1 minute.
