  1. 2 c Cooked or canned black beans

  2. -- (rinse & drained canned) 2 c Cooked rice

  3. 1 1/2 c Fresh cilantro

  4. 1/4 c Lime juice

  5. 3/4 c Oil

  6. 1/2 c Chopped onion

  7. 2 Garlic cloves; crushed

  8. Salt Freshly ground black pepper Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil.
