  1. Tapioca Pudding

  2. 2 tablespoons quick-cooking tapioca

  3. 2 2/3 cups milk, scalded

  4. 1/2 cup sugar

  5. 3 egg yolks

  6. 1 teaspoon vanilla

  7. 3 egg whites

  8. 1/4 teaspoon salt

  9. In the top pan of a double boiler stir the tapioca into the hot

  10. milk and cook it over simmering water 3 minutes, stirring frequently.

  11. In a heatproof mixing bowl stir 1/4 cup of the sugar into the egg

  12. yolks and very slowly blend in the hot tapioca and milk. Return

  13. the mixture to the pan over the hot water and continue cooking

  14. until it has thickened. Remove the pan from over the water and stir

  15. in the vanilla. Cool the mixture slightly and fold in the egg

  16. whites, beaten until stiff with the salt and remaining sugar. Pour

  17. the pudding into 6 serving dishes and cool and chill it.
