  1. 2 oz 56g Bone-in chicken breasts (large)

  2. 2 tablespoons 30ml Bayou Blast - seeNote

  3. 1/2 lb 227g / 8oz Shiitake mushrooms - thinly sliced

  4. 1 lb 454g / 16oz Onion - cut in

  5. 8 wedges (medium)

  6. 6 Garlic cloves

  7. 1/2 cup 118ml White wine

  1. Recipe Instructions * Note: See the "Bayou Blast - {Emeril's Creole Seasoning}" recipe which is included in this collection. Preheat oven to 400 degrees. Sprinkle chicken breasts with some of the Bayou Blast and rub in. Place in earthenware pot with mushrooms, onion wedges and garlic cloves. Toss vegetables with remaining Creole seasoning. Pour wine over all and cover pot tightly with aluminum foil. Cook 30 minutes, or until chicken is cooked through and tender. Be careful of hot steam when you uncover pot. This recipe yields 2 servings.
