  1. Crabapple Butter

  2. 10 lb crabapples

  3. 7 1/2 cup white sugar

  4. 4 cup water

  5. 1/2 Tbsp ground cinnamon

  6. 1 tsp nutmeg

  7. 1 tsp allspice

  8. 1/2 tsp ground cloves

  9. Wash crabapples, remove the stems and blossom ends. Place in large

  10. preserving kettle, add water, cover and cook until soft, about 45

  11. minutes, stirring occasionally to prevent sticking. Put through a

  12. coarse sieve. Return to kettle, add sugar and spice. Cook slowly

  13. until thick, about 2 hours. Pour into hot sterilized jars and seal

  14. at once.
