  1. 1 1/2 cups whole wheat flour

  2. 1/2 cup oatmeal

  3. 1 teaspoon baking powder

  4. 2 teaspoons cinnamon

  5. 2 medium carrots , grated

  6. 1/2 cup raisins

  7. 1/2 cup walnuts , chopped

  8. 1/2 cup desiccated coconut (preferably unsweetened to keep it healthy)

  9. 1 medium apple ,

  10. 1/2 grated &

  11. 1/2 chopped into small chunks

  12. 1/2 cup yoghurt

  13. 1 banana , mashed

  14. 1 teaspoon baking soda

  15. 3 eggs , beaten

  16. 1/2 cup butter , melted

  17. 3 teaspoons vanilla essence

  1. Preheat oven to 180°C/350°F/Gas 4.

  2. In a mixing bowl combine wholemeal flour, oatmeal, baking powder, cinnamon, grated carrots, raisins, chopped walnuts, coconut and the grated apple.

  3. In a second bowl mix the yoghurt, banana and baking soda, once combined add the eggs, melted butter and vanilla essence.

  4. Blend well and then stir into the flour mixture until the two are combined.

  5. Don't overbeat.

  6. Bake in muffin tins for approx 20 minutes.
